Culinary guru, Chef Amna Al Hashemi shares her easy-to-make pink pasta recipe that you can recreate at home!
Ingredients:
250g penne pasta
1 onion
2 cloves of garlic
200g of mushrooms
2 cups of baby spinach
2 chicken breasts
2 teaspoons of tomato paste
1 can of diced tomatoes
1 teaspoon of dried basil
1 teaspoon of dried oregano
1 teaspoon of chili powder
1 teaspoon of sugar
2 tablespoons of cream cheese
½ cup of parmesan cheese
Method:
- Boil water then add salt and olive oil and cook the pasta as per the instructions on the box.
- In a separate skillet, add one tablespoon of olive oil and add the onions.
- Add one tablespoon of butter and drizzle a bit more olive oil
- Sautee onions until golden then add the minced garlic
- Sautee until soft and fragrant
- Add mushrooms
- Add salt
- Add tomato paste
- Add chopped tomatoes
- Add dried basil and dried oregano
- Add black pepper
- Add chili powder
- In another skillet, heat a tablespoon of olive oil
- Add chicken sprinkled with salt and pepper and grill on both sides.
- Back to the sauce, add more salt
- Add sugar
- Add cream cheese and mix well.
- Add one cup of baby spinach and let simmer
- Add the rest of the spinach and mix softly
- Add parmesan cheese
- Add the cooked pasta
- Slice the grilled chicken
- Serve by layering the pasta with the grilled chicken on top.
- Sprinkle some parmesan cheese
- Add a bit of black pepper
